The sweet potato is known to be a source of beta carotene which promotes a healthy skin, hair and vision. Additionally, the sweet potato also contains large amounts of vitamin C and vitamin E, essential antioxidants which play an important role in the body, thus moving away diseases.
The sweet potato also contains large amounts of dietary fiber, which can help us to achieve the feeling of fullness more quickly and ensures optimal functioning of the digestive system. Also, as is fat and cholesterol free, and only contains about 120 calories per serving, is one of the best tubers to implement in our diet.
Here is a recipe super delicious and easy to prepare
Ingredients (2 people)
- 1 sweet potato
- 2 carrots
- 2 tomatoes
- 1 small piece of spring onion
- Lettuce, spinach and rocket leaves
- 1 chicken breast
- Himalayan Salt, black pepper and other herbs to taste
Peel the sweet potato and chopping. Put water to boil in a pot, after boiling, place the pieces of sweet potato for 10 minutes or until tender. Remove from the pan.
Peel and cut the carrots into sticks, place in boiling water for about 3 minutes. Remove from the pot and put it together with the sweet potato.
Cut the tomato (as shown in the picture) and remove the seeds to reduce the acidity of the tomato. Then cut into medium pieces and add to the mixture of sweet potato and carrot.
Chop the spring onion. Mix the lettuce, spinach and rocket leaves and join them to the rest of the preparation.
The chicken can be seasoned to taste, I did it with Himalayan salt, black pepper, Italian herbs and rosemary. Then place it on the grill until golden on both sides. Once ready, cut it and add it to the salad.
As a dressing I just used extra virgin olive oil , but you can use the one you like .
